THE HISTORY OF ADMIRALS COVE

The Club and Community at Admirals Cove evolved from a vision by developer Ben Frankel (Frankel Enterprises). The community was built around a unique canal system created in the 1960s by John D. McArthur.

In 1986, Frankel Enterprises purchased the Admirals Cove property from The John D. and Catherine T. McArthur Foundation. The property at the time of purchase was vacant and undeveloped. The majority of the canals that exist today were already dug, but extensive maintenance dredging and bulkheading was required.

Development of the property began in the spring of 1986, and the first model homes were completed by the end of that year. The marina, clubhouse, and 18-hole championship East golf course designed by Robert von Hagge opened for play in 1987, and the first residents moved in during that winter season.

The Harbor Master building served as a temporary clubhouse until the Main Clubhouse was completed in 1989. The Golf Village course was built in 1991, and the Golf Village Clubhouse opened in 1993.

In 1999, the management and control of The Club was turned over from the developer to the members in one of the smoothest club transitions in the history of country club communities.

Today there are approximately 900 residents who are proud to call Admirals Cove their home.

Garde Manger Chef

Brief Job Description

The Club at Admirals Cove in Jupiter, Florida is seeking an experienced Garde Manger Chef to join our team of professionals. This is a management level position and a qualified candidate should demonstrate a commitment to: quality, productivity, dependability, member focus and adaptability.

As a Garde Manger Chef, you will be responsible for supervising cold kitchen and prepare products according to club recipes and standards.

Responsibilities include, but are not limited to:

  • Slices and proportions cold cooked meat, fish and poultry; garnishes them in an appetizing and tasteful manner
  • Prepares appetizers, hors d’oeuvres, center pieces and relishes in an attractive manner
  • Prepares cold sauces, jellies, stuffings, salad dressings and sandwiches using club recipes and standards
  • Supervises pantry crew in the preparation of salads, dressings, etc.
  • Schedules and supervises cold food preparation staff; responsible for their performance, evaluation, discipline and motivation
  • Requisitions food supplies necessary to produce the items on the menu
  • Adheres to state and local health and safety regulations
  • Maintains the highest sanitary standards
  • Notifies Sous Chef in advance of expected shortages
  • Maintains security and safety in work area
  • Maintains neat professional appearance and observes personal cleanliness rules at all times
  • Ensures that work area and equipment are clean and sanitary
  • Covers, dates and neatly stores re-usable leftover products
  • Assists with other duties as instructed by the Executive Chef

 

Candidate Qualifications

  • Previous experience working in luxury resort (Ritz Carlton/Four Seasons) or country club required
  • Ice Carving experience a plus (additional compensation for ice carvings)
  • Extensive experience- cold kitchen, pantry, Garde Manger, Sushi, Canope, Charcutterie, Fruit & Veg Carving
  • Experience with high volume kitchen and fine dining
  • Must be able to multi-task and manage a team of 11 cooks

Educational Requirements

  • Have and maintain a valid Florida Drivers License
  • High School Diploma or Equivalent
  • Culinary Arts Degree (Preferred, not required)

$70,000.00 to $79,999.00
