How has this idea enhanced your club's operation, etc.?
Our Artisan Pastry and Bread Program utilizes the in-house pastry team to make various baked goods that are not only used in dinner service or banquet; they make items to sell in our cafe, such as French baguettes and ciabatta (unsold loaves are used for dinner service in the restaurants that evening when the cafe closes at 3 pm). The team also makes a pastry of the month, coffee cakes, muffins, banana bread or cinnamon rolls, and freshly made sandwiches on their homemade biscuits for the cafe. In addition to the regular cafe menu and restaurant rolls, buns, and desserts, they offer cookie and cupcake kits for the holidays, accept custom orders and banquet orders such as wedding cakes, birthday cakes, or cupcakes, and occasionally teach classes such as our popular King Cake class.
How was this idea implemented, and what have been the club members' reactions?
The pastry team has implemented this program by adding each new item individually. The bread is usually sold before 3 pm, and cookie and cupcake kits are very popular, especially when the kids are out of school. Mardi Gras King Cakes are becoming a Greystone Tradition whether the Member is taking the class or ordering whole cakes for carryout, or slices in the cafe. It is not unusual for Members to order desserts and cakes for gathering at their homes. Members enjoy having the ability to order baked goods from the Club.
