Gueridon Services: Bringing the Buffet Experience Tableside
How has this idea enhanced your club's operation, etc.?
To ensure an intimate and safe experience for our membership, BCC introduced gueridon service, (a service where food is presented to guests on a moveable cart) for our holiday events. The Club introduced the service to replace the traditional buffets for Thanksgiving Dinner, Oyster Roasts, Champagne Brunches, Santa Brunches, Candlelight Dinners, and Holiday Dinners. Our Culinary and Food & Beverage Teams maneuvered the gueridon carts tableside to offer a display of hors d’oeuvres, small plates, raw bar offerings, specialty soups, and our prime rib.
How was this idea implemented, and what have been the club members' reactions?
Implementation of gueridon service required innovation, training, and creative menus that allowed our operation to bring the buffet experience tableside. Our membership loved the intimate experience of having each “buffet station” rolled to their table. It promoted excitement, conversation, and ingenuity that was celebrated by both members and staff. The gueridon service was so successful that we have themed À la Carte specials to be tableside, such as Dover Sole and Tomahawk Steak.
