Keeping Wines Fresh

How has this idea enhanced your club's operation, etc.?

Woodfield has always offered members a diverse selection of wines by-the-glass. The challenge was that by-the-glass wines above the $20 mark did not sell as quickly and often resulted in loss of product and member confidence due to spoilage. The Coravin eliminates this concern entirely by keeping wines fresh up to six months or more after the first pour. With the implementation of the Coravin system we are now able to offer our membership a much higher level of quality by-the-glass wines with little to no risk.

How was this idea implemented, and what have been the club members' reactions?

Coravin provided training and support from local representatives for our management and bartending teams. Then, we expanded our by-the-glass offerings to include wines well above the $25 mark, now with little to no risk of spoilage. When speaking to members about the new offerings great focus was placed on our new ability to pour a fresh glass of wine every time. This aspect of the program is extremely important to our members who are interested in wines of a higher quality and price point.

Member confidence and satisfaction in our by-the-glass program has grown significantly and so have our check averages. It is a real win-win scenario.
