Poke Bowl Menu
How has this idea enhanced your club's operation, etc.?
Sushi is extremely popular with the Woodfield membership; so much so, that members were requesting it in our fast casual poolside restaurant. The space requirements for sushi equipment and additional labor for a sushi chef, combined with the fast speed of service at our poolside restaurant, made sushi a difficult option at this venue.
To satisfy the desire for sushi, we developed a Poke Bowl menu. The menu features three unique varieties; Dynamite, Lomi Lomi and Tosaka, which are served over a choice of white or brown sushi rice, mixed greens or quinoa.
How was this idea implemented, and what have been the club members' reactions?
Woodfield’s Culinary team developed a menu featuring three unique varieties; Dynamite, Lomi Lomi and Tosaka, which are served over a choice of white or brown sushi rice, mixed greens or quinoa. Members are especially pleased with the mixed greens choice as it offers a healthy low carb option. The Poke Bowl menu was easily incorporated on our salad station without adding any additional labor or equipment.
The Poke Bowls have been extremely well received and account for approximately 20% of our sales mix. The bowls are profitable and offer a great perceived value.
