How has this idea enhanced your club's operation, etc.?

The sushi program at KCC began as just a carryout concept during COVID closures to be able to compete with local restaurants that also had sushi programs. Once the clubhouse reopened, the sushi program found a permanent spot on our dinner menu and continued to grow. We now offer sushi every day for dining and carryout, private event packages, and club events. What started as a small specialty carryout idea has expanded our F&B program to be more adventurous while offering menu items that most dining outlets in our area do not have available.

How was this idea implemented, and what have been the club members' reactions?

Once we found the right Chef to lead the charge, we expanded to have three fulltime sushi chef's on staff to be able to produce the demand received. The club started with just a few rolls on the menu and then expanded into a full sushi section of our menu, producing rolls, sashimi and nigiri, soups, appetizers, and entrees.

The club members love our sushi program and often bring in friends to dine at the club just for it. Our specialty club events where you can learn to make sushi with our Chef quickly sell out, and members love to add a sushi rolling station to a private event for an elevated menu.
