Transforming the Pavilion
How has this idea enhanced your club's operation, etc.?
Our poolside Pavilion prior to Covid-19 was a seasonal dining facility from Memorial Day to Labor Day for families to enjoy both hot items from our menu or take away snacks. The menu is primarily focused on children and family fare. Once the pandemic brought the need for extended outdoor dining for adults and families, we turned our Pavilion into a cafe concept and expanded both our food and beverage menus. We included more complex breakfast and lunch options, and extended our beverage concept to offer an extensive coffee bar and a full bar offering alcohol. We have come to realize that this operation postpandemic may be very much desired!
How was this idea implemented, and what have been the club members' reactions?
We were able to completely transform the Pavilion space to ensure proper safety standards were in place with distancing and offered to-go orders in advance. We offer barista style coffee service, fresh made pastries, smoothie bar, branded signature snacks, grocery style pantry items, liquor, and beer and wine retail. The members have come to not only appreciate all they can come to purchase, but they now claim to have a favorite breakfast and lunch spot to go. Our members that participate in our fitness programs have also loved having an outlet to stop by on the way home to pick items up. While we never imagined having our summer seasonal pavilion open throughout the year, we are so excited members have enjoyed it, even in a heavy winter jacket and outside!
